Gluten-Free Veggie Chili

Gluten-Free Vegetarian Chili

Choice of Ingredients (1/2 to 1 cup of each):
Chopped onions
Chopped celery
Chopped red peppers
Chopped green peppers
Sliced carrots

Heat 2-3 tablespoons of olive oil in a pan and add your choice of veggies.  Saute gently for about 20 minutes.

Add:
3 crushed garlic cloves
1 large can diced tomato
1 can tomato paste and 1 can water
1 can (more or less) of red kidney beans
1 package Old El Paso Chili Seasoning (double check to make sure ingredients are gluten-free or use seasonings of your choice)

Bring to a boil and let simmer for about 30 more minutes.  Enjoy with rice or gluten-free bread.

Optional - Add:
1/2 cube of Baker's unsweetened chocolate and 1 tablespoon of brown sugar
OR
1/2 cube of Semi-Sweet Baker's Chocolate

The addition of the chocolate adds a rich flavour and nice texture to the chili but is not mandatory.

If you are not vegetarian, you can add half a pound of cooked ground beef.

Gluten-Free Sugar Cookies!

This recipe is perfect for baking a batch of cookies for Valentine's Day or Christmas!

Gluten-Free Sugar Cookies

1 cup softened butter
1 cup granulated sugar
2 egg yolks
2 tsp vanilla

1/2 cup brown rice flour
3/4 cup white rice flour
1/2 cup tapioca starch/flour
1/4 cup cornstarch
1/4 cup sweet rice flour
1 tsp xanthan gum
1/4 tsp salt

Blend flours, xanthan gum and salt together in a medium bowl.

Combine sugar and butter together in a separate bowl and use electric mixer to beat together.

Add egg yolks and vanilla and beat for one minute.

Slowly add flour and beat.  Use hands to knead dough until smooth.

Refrigerate dough for one hour.

Preheat oven to 350*.

Sprinkle rice flour on your work surface and roll out dough until approximately 1/4 inch thick.

Cut out desired shapes using cookie cutters.

Place 1 inch apart on baking sheet lined with parchment paper.

Bake for 7-12 minutes, depending on size.  They are ready when the edge start to turn golden brown.

Cool on cooling rack before storing or decorating.
