Gluten-Free Mexican Pizza
This vegetarian "recipe" is easy to make and only needs a few ingredients and some creativity.
Gluten-Free Mexican Pizza
Large tortilla, one for each person (I use Food for Life Rice Wraps)
Refried beans
Shredded cheese
Avocado
1. Place frozen tortilla in a frying pan over medium heat.
2. Spread beans and then sprinkle cheese on top.
3. Wait for tortilla to get a little bit crispy and the cheese to melt. Remove from stove and top with avocado.
You can also add in some ground beef, bell peppers, lettuce, sour cream, salsa, olives, tomato chunks, taco seasoning (mixed with the beans) or whatever you like.
Not much of a recipe but it tastes good and only takes about 5 minutes.

This looks really yummy! I have yet to try the rice tortillas.. but may have to get them for this!
